Carob Walnut Coconut Truffles

This recipe makes a half of a quart mason jar. It is a healthier alternative to candy and is more like a nut bar.

Chop 1/2 cup walnuts until they are pea size or smaller in food processor. Put in a large mixing bowl and set aside.

Grind the flax seeds in the food processor until most of then are chopped in half. Add 1/4 cup walnuts and chop. Add Oatmeal and chop for a few seconds. Add carob powder and blend a couple of turns. Add the almond butter, agave and rice syrup and blend together until it is well mixed and sticks together.

Pour the truffle mix into the bowl with the chopped walnuts and mix together by hand until it forms one sticky ball. Roll a small bit of the mix in your hand to form a one inch ball. Roll truffle in a dish of shredded coconut until covered. Finish batch and store in a covered jar in the refrigerator. Serve at room temperature.

3/4 Cup Walnuts
1/4 Cup Golden Flax Seeds
1/4 Cup Thick Cut Oatmeal
1/4 Cup Carb Powder
1/3 Cup Almond Butter
1/2 Cup Coconut
2 Teaspoons Agave Syrup
2 Tablespoons Brown Rice Syrup
